COWPEAS CURRY(DRY VERSION)
Cowpeas are not only versatile and delicious but also important for human health offering a number of benefits such as their ability to increase digestion, aid sleep disorders, manage diabetes, protect the heart, detoxify the body, aid in weight loss and strengthen circulation. The impressive levels of antioxidant compounds found in cowpeas, as well as vitamin C, A, proteins, makes it excellent for improving the appearance and health of your skin. Cowpeas is our all-time favourite in our family. I prepare gravy, sundal using cowpeas. Today I am going to share dry version cowpeas curry.

Ingredients:
1 cup cowpeas(soaked for 6 hours)
1/2 onion finely chopped
4-5 garlic cloves(finely chopped)
1 tomato(finely chopped)
few curry leaves
1 red chilli
1/4 tsp mustard seeds
1/4 tsp urad dal
1/4 tsp channa dal
1/2 tsp cumin powder
1/2 tbsp red chilli powder
1 tbsp coriander powder
1/4 tsp garam masala
oil
salt
few coriander leaves

Method:
1. Pressure cook cowpeas adding 2 cups of water and little salt for 3 whistles. Once cooked drain the water. (you can use this water for making rasam)
2. In a pan add oil, mustard seeds, urad and channa dal, curry leaves. Once the mustard seeds splutters, add garlic cloves and onions and fry until they turn light brown. Next add all the spice powders and fry for 2 mins.
3. Add tomatoes and fry until it is completely cooked and the oil starts to leave at the side. Now add the cooked cowpeas and mix well. Cook for 2-3 mins and switch off the flame. Garnish with coriander leaves. Serve hot and enjoy as a side dish with dal, rasam or with chapatis!!!
