CHICKEN GRAVY(KOZHI KUZHAMBU)


                                             
Chicken Gravy I made by using spices and coconut milk. This recipe I learnt from my father. He cooks variety of chicken recipes. I will be sharing it in my future blog. This gravy(kuzhambu) goes well with idli,dosa,rice,chapati etc.

Serves: 3 to 4 

Ingredients:

2 lb chicken
1/4 inch of cinnamon
5-6 cloves(lavanga)
2-3 cardamoms
4 tbsp coriander seeds
1/2 tbsp cumin seeds
1/4 tsp fenugreek seeds
1 tbsp fennel seeds
10 cloves garlic
1/2 inch ginger
1 onion(medium size roughly chopped)
1/2 onion
1 cup coconut milk
4-5 red chillies(as per taste)
1/2 tbsp pepper

Method:

1. In a pan add 1 tsp oil, cinnamon, cloves, cardamom and fry for 2 seconds. Add fenugreek seeds, cumin seeds, fennel seeds, red chillies, black pepper, corriander seeds and fry until it turns light brown. Keep this aside.

2. In the same pan add 1 tsp oil and onions and fry until the onion turns golden brown. 
3. In a blender grind all the fried ingredients(step 1) along with the fried onions, ginger and garlic into a smooth paste.


4. Prepare coconut milk.


5. In a cooker add 3 tbsp oil, 1 tbsp ghee and add onions and curry leaves and fry until the onions turn light brown. Now add chicken, 1/4 tsp turmeric, little salt and fry for 4 to 5 mins.

6. Now add grinded mixture along with 1 cup of water and required salt. Cook for about 10 to 15 mins until the raw smell goes and chicken is fully cooked.
7. Add coconut milk and cook for another 5 to 7 mins on a medium flame.

Garnish with coriander leaves and enjoy with hot rice or idli or dosas!!!!!
