MANGALOREAN CHICKEN GRAVY
Chicken Gravy is prepared in different ways. Coconut is an integral part of mangalorean cuisine. It is also a main ingredient for this chicken gravy along with spices. I have learnt this chicken gravy from my neighbor who is a mangalorean. In this recipe I have dry roasted the spices and grinded them with coconut. It goes well with hot rice, neer dosa, ghee rice etc. I had prepared this chicken gravy as a side dish for ghee rice.

Ingredients:
1 kg chicken
1 medium size onion( chopped finely)
few curry leaves
pinch of turmeric
1/4 cup thick coconut milk
few coriander leaves finely chopped
salt
oil


Ingredients for grinding:

11/2 tbsp coriander seeds
1/2 tbsp cumin seeds
1/4 tsp fenugreek seeds
5-6 red chillies( as per your taste)
1/2 onion( if its large in size) or 1 onion( if its medium in size)
1/2 cup freshly grated coconut
1 tsp black pepper corns
4-5 cloves
small piece of cinnamon
6-7 garlic cloves


Method:

1. wash and marinate the chicken adding turmeric and salt. Mix well and keep it aside for 15-20 mins.
2. Fry fenugreek seeds for 3-4 mins in a medium flame. Next dry roast the other ingredients  mentioned under grinding except onions and garlic until you get nice aroma. Keep it aside. Add 1 tbsp oil, onions and fry until the onions turn golden brown. Now take a blender and add all the ingredients( dry roasted) along with fried onions, garlic, coconut and grind it into a fine paste.
3. In a pan add 3 tbsp oil, onions and fry until the onions turn light brown. Next add the marinated chicken, mix well and saute for 5-7 mins. Next add the curry leaves and fry for another 2-3 mins. 
4. Add the grinded mixture along with 1 cup of water, required salt and mix well. Cover the lid and cook it in a medium flame and keep sauting in between. Cook until the chicken is fully cooked and oil starts to separate.
5. Once the chicken is fully cooked, add coconut milk and mix well. cook for another 5 mins and switch off the flame. Garnish with coriander leaves and serve hot.

Enjoy with hot rice, Neer Dosa, Ghee rice!!!!
