HARYALI MUTTON GRAVY

Haryali Mutton Gravy is prepared using coriander leaves, mint leaves and green chillies. This is my father's recipe. You can try the same recipe with chicken too[ Just let me know how it came :) ]. This recipe goes well with hot rice, idlis, dosas and parathas.

Ingredients For Grinding:
1/2 onion
10 cloves Garlic
1/4 inch ginger
1/2 tbsp cumin seeds
1/2 tbsp black pepper
5-6 fenugreek seeds
1/4 inch cinnamon
6 cloves
3 cardamom
1 tbsp coriander seeds
1/2 tbsp fennel seeds
4-5 green chillies(as per taste)
1 handful of mint leaves
1 handful of coriander leaves

Ingredients for seasoning:

1/4 onion finely chopped
3 -4 crushed Garlic
few curry leaves

Remaining ingredients:

1.5 lb mutton(lamb)(wash it nicely)
1 1/2 cup of coconut milk
pinch of turmeric powder
salt

Method:

1. Grind all the ingredients mentioned under grinding using a blender.

2. In a cooker add 2 tbsp of oil, 1 tbsp of ghee, crushed garlic and curry leaves. Fry for few seconds. Once the garlic turns light brown add chopped onions and fry for few mins until onions are cooked.
3. Now add mutton, pinch of turmeric powder and saute for 3-4 mins. Add little salt and fry for another 3-4 mins.

4. Add the grinded mixture, mix well. Keep sauting in between and cover the lid. Once the oil starts to separate add 1 cup of water and cover the lid and pressure cook for 8- 9 whistles [FYI, the number of whistles depends on the cooker and meat too]. You can keep check and see whether the mutton cooked properly.

5. Check whether the mutton is cooked fully. If its not cooked then pressure cook again for 2-3 whistles.
6. Once the mutton is fully cooked, add the coconut milk, mix well and cook for 6-7 mins. Ready to serve :)

Enjoy with hot rice!!!
