EGG GRAVY(MUTTAI KUZHAMBU)

Egg Gravy(Muttai Kuzhambu) is our all-time favourite dish. I have prepared this recipe by grinding all the ingredients. It goes well with hot rice, idli, dosas or chapatis. I have learnt this recipe from my mother. It is a very easy recipe and doesn't take much time. 

Ingredients:
3 - 4 eggs
1/2 onion (if its big in size) or 1 full onion(if its medium in size)
7 - 8 garlic cloves
1/2 inch ginger
1/2 inch cinnamon
4 - 5 cloves
2 cardamoms
1/2 tbsp black pepper
1 tbsp coriander seeds
4 -5 red chillies(as per your taste)
1 tomato(finely chopped)
1 tbsp coriander leaves(chopped)
few curry leaves
1/4 cup coconut

Method:
1. In a pan add 2 tbsp oil, cloves, cardamom, cinnamon, black pepper, coriander seeds and red chillies and fry in medium flame until coriander seeds turn golden brown.
2. Now add onions, garlic, ginger and saute until onions and garlic turn light brown. Add tomato and fry until tomatoes are cooked.
3. Next, add shredded coconut and fry for 2 mins. Let it cool.
4. In a blender grind all the fried ingredients adding coriander leaves. Keep it aside.
5. In a pan add 2 tbsp of oil, curry leaves and fry for few seconds. Now add the ground mixture and 1 cup of water, required salt and boil it in medium flame
until the oil starts to separate.
6. Now crack the eggs and carefully drop them in the curry, leave it undisturbed.
7. Close it with a lid and cook until eggs turn firm and get cooked. Allow the curry to boil for 2 - 3 mins. Do not stir the gravy till the eggs are cooked. Once the eggs are cooked switch off the flame.

Enjoy with hot rice!!!!
