TOMATO RASAM

Tomato Rasam is usually prepared in many ways. It mainly differs in rasam powder which we use. I usually use Shakti Rasam Powder and also home made rasam powder. Rasam is a very good remedy for cold, cough, sore throat, fever. Whenever we are sick we don't feel like eating anything just having some hot soup. Rasam you can have with rice or you can also drink like a soup too. It also helps in digestion. 

Here I used Shakti Rasam Powder to prepare Rasam. I will be sharing how to prepare home made rasam powder in my future blog.

Ingredients:
1 medium size tomato
small lemon size tamarind 
1/4 tsp mustard seeds
1/2 tsp cumin seeds
3-4 garlic cloves (crushed)
few curry leaves
1 red chilli
3/4 tbsp rasam powder(as per taste)
pinch of hing
salt
few chopped coriander leaves.

Method:
1. Boil the tomato in a vessel adding 1-2 cup of water. Boil it until the tomato is fully cooked.
2. Soak the tamarind in 1/4 cup of warm water for few mins.
3. Remove the skin of the boiled tomato and mash it nicely with hand. Do not discard the water which you used for boiling tomato. (mash the tomato in the same water used for boiling).
4. Add the tamarind extract and salt to the above. 
5. In a small pan add 1 tbsp oil, mustard seeds and cumin seeds. Once the mustard seeds splutter add curry leaves, red chilli, crushed garlic and saute until garlic turns light brown in a medium flame. Finally add hing, rasam powder and switch off the flame. Add this seasoning to the vessel containing mashed tomato and tamarind mixture.
6. Boil this rasam in a medium flame until the froth starts foaming. Switch off the flame and garnish with coriander leaves. 

Enjoy with hot rice!!!
