BHINDI CURRY(DRY VERSION)

Bhindi or okra is a vegetable, from which many recipes can be prepared. This recipe I have prepared in a dry version which goes well with rice, chapatis. I learnt this recipe from my mother. Here I have not used ginger or garlic.

Ingredients:
1/2 lb bhindi or okra
1 onion( if its medium size) or 1/2 onion(if its big in size)
2 tomatoes medium size
1/2 tbsp fennel seeds
1/2 tsp cumin seeds
1/2 inch cinnamom
3 - 4 cloves
1/4 tsp turmeric powder
1/2 tbsp red chilli powder
1 tbsp coriander powder
salt
coriander leaves

Method:
1. Wash the okras, pat dry and slit the okra pods lengthwise into 4 pieces.
2. In a pan add 2-3tbsp oil and add the okras and fry in a medium flame by adding little salt. Once the okras almost cooked, switch off the flame and keep it aside.
3. In a blender grind cinnamon, fennel seeds, onions, tomatoes into a fine puree.
4. In a pan add 3 tbsp oil, cumin seeds and grinded mixture and fry by closing the lid and sauting in between. Once the oil starts to separate add turmeric, red chilli powder,  coriander powder and fry for 2 mins.
5. Now add the fried okras or bhindi, required salt and mix well in a low flame for 2 mins. Switch off the flame and garnish with coriander leaves.

Enjoy with hot rice or chapatis!!!!
