SAMBAR WITHOUT DAL

Sambar is usually prepared using toor dal or moong dal. In this recipe, I have not used any dal. I have learnt this from my neighbor who is a mangalorean. She cooks variety of mangalorean dishes. I have used bottle gourd to prepare this sambar. You can also use brinjals, drumstick or radish to prepare this sambar. It goes well with dosas, idlis and hot rice.

Ingredients:
1 full bottle gourd(small size)(cut into small pieces)
1/4 onion(roughly chopped)
3 garlic cloves
1/2 tbsp cumin seeds
2 -3 red chillies( as per taste)
1 tomato(finely chopped)
1 tbsp coriander seeds
2 tbsp shredded coconut
1/4 tsp mustard seeds(grinding)+1/4 tsp mustard seeds(seasoning)
pinch hing
small marble size tamarind
salt

Method:
1. In a pan add 2 tbsp oil, mustard seeds, cumin seeds, red chillies, coriander seeds and saute until cumin and coriander seeds turn light brown. Now add onions and garlic, fry until onions and garlic turns light brown. Add tamarind with this.
2. Switch off the flame and add shredded coconut. Once it cools grind them into a fine paste.
3. In a pan add 1-2 tbsp oil, mustard seeds, curry leaves, red chillies. Once the mustard seeds splutters add tomatoes and fry until tomatoes are cooked. Next add bottle gourd pieces, little salt and 1 cup of water. Once bottle gourd is almost cooked add grinded mixture and required salt. Cook until the bottle gourd is completely cooked and raw smell of the grinded mixtures goes. Switch off the flame and Serve hot.

Enjoy with hot rice!!!!
