VEGETABLE BIRYANI

Vegetable Biryani can be cooked in different ways. I tried in 2 to 3 methods and its our all time favorite. It's also a good lunch box recipe. It takes very less time to cook. you can have this with raita. We can try using different vegetables of your choice. I have used beans, carrot and peas. You can also use cauliflower, potatoes etc.

Ingredients:
1 cup sona masoori or basmati rice(soaked in water)
1 bay leaf
4-5 cloves
2-3 cardamoms
1/2 inch cinnamon
1/2 tsp cumin seeds
1 tbsp ginger garlic paste
5-6 green beans
1/2 carrot
1/4 cup frozen peas
1/2 onion(finely chopped)
1 tomato(chopped finely)
2 green chillies
1 handful of mint leaves
Masala Powders:
1/4 tsp turmeric powder
1/2 tbsp red chilli powder(as per your taste)
1 tbsp coriander powder
1/2 tsp garam masala powder
1/2 tbsp biryani masala powder(I used aachi)
Method:
1. In a pressure cooker add 4 tbsp oil, bay leaf, cloves, cinnamon, cardamom, cumin seeds and saute for few seconds. Add onions and green chillies and fry until onions turn light brown.
2. Next add ginger garlic paste and saute for 2-3 mins. Add tomatoes and all the masala powders and fry until tomatoes are cooked. Now add all the chopped vegetables and fry for 2 mins.
3. Add mint leaves and fry for 2 mins. Now add the soaked rice and mix well. Add 2 cups of water and required salt. Once it starts boiling mix them again and close the pressure cooker. Leave for 2 whistles an switch of the flame.
4. Once the cooker cools down. Open the lid and mix well from bottom.

Serve hot and enjoy with onion or cucumber raita!!!
