TOMATO CHUTNEY(USING MINT AND CORIANDER LEAVES)

Tomato chutney recipe is prepared using various methods and ingredients. I usually prepare in 2 to 3 methods. Here, I have used both mint and coriander leaves. It goes well for both idli and dosas. The other 2 methods I will be sharing in my future recipes.

Ingredients:
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp urad dal
1/4 tsp channa dal
1/2 onion
6-7 garlic cloves
3-4 red chillies(as per your taste)
2-3 tomatoes
3 tbsp mint leaves
2 tbsp coriander leaves
1/4 -1/2 cup shredded coconut
salt

Method:
1. In a pan add 2 tbsp of oil, mustard seeds, cumin seeds, urad dal and channa dal and fry. Once the mustard seeds splutters, add onions, red chillies, garlic and fry until the garlic and onions turn light brown.


2. Add chopped tomatoes and fry until the tomatoes are cooked. Once they are cooked, add mint and coriander leaves and saute them for 2-3 mins.


3. Next add shredded coconut, required salt and mix well. Turn off the flame and allow it cool. 



4. Take a blender and grind all the fried ingredients.

Enjoy with hot idlis and dosas!!!
