LEMON RICE(CHITRANNA)


Lemon Rice is my husband's favorite recipe. I cook it regularly for breakfast and lunch. It is a very easy and simple recipe for lunch box. It is also very good dish to carry while traveling.

Ingredients:
  
 1 cup of rice(soak it in water for 15 mins)
 1/4 tsp mustard seeds
 1/4 tsp cumin seeds
 pinch of hing
 3/4 tbsp chana dal
 3/4 tbsp urad dal
 pinch of turmeric
 3-4 green chillies(slit into 2 halves)
 1-2 red chillies
 1-2 tbsp groundnuts
 few curry leaves
 1 small lemon
 coriander leaves


Method:


1. Pressure cook the rice and keep it aside and let it cool. 
2. In a pan add oil,mustard seeds and cumin seeds.Once the mustard seeds splutters add red chillies,curry leaves,chana dal and urad dal and groundnuts saute it until dals and groundnuts turn light brown.
3. Add green chillies and saute for few seconds. Add hing and turmeric powder and switch of the flame.
4. To this same pan add cooked rice,salt,squeeze lemon juice fully(lemons cut into 2 halves) and mix well.
Garnish with coriander leaves and enjoy!!!!
