ENNEGAYI(STUFFED BRINJALS)

                                          



Ennegayi(Stuffed Brinjal) is a North karnataka cuisine. It is usually prepared as a side dish for rice,chapati,jolada roti(jowar roti). Brinjal or egg plant have lots of vitamins and nutrients.It also contains a good amount of potassium, magnesium and folic acid.

Ingredients:

3-4 brinjals of medium size
1/2 onion 
few curry leaves
mustard seeds
turmeric
gooseberry size tamarind(extracted in 1/2 cup of water)
2 tsp jaggery
salt

Ingredients for grinding:

sesame seeds
1 tsp urad dal
1 tsp channa dal
2 tsp coriander seeds
2 tbsp groundnuts
1 tsp fried grams
1/4 tsp fenugreek seeds
3-4 red chillies(as per taste)
1/2 cup grated coconut

                    

1. Fry sesame seeds until it turns light brown (you can use white sesame seeds) if your using black sesame seeds fry them in low flame until u get light aroma. keep it aside.
2. In the same pan fry groundnuts and keep it aside.
3. Add 1 tbsp of oil and fry the remaining ingredients without coconut.
4. Grind all the ingredients adding little water (it should be medium thick able to stuff inside the brinjal). Add little salt to the grinded mixture.
5. Clean the brinjals and slit them into +sides retaining the stalk portion. stuff the grinded mixture inside the brinjals.
6. In a pan add 4 tbsp oil,mustard seeds,onion,turmeric and curry leaves and fry until the onions are cooked.

                
7. Add stuffed brinjals and stir them carefullyafter few seconds. Once Brinjals are half cooked add tamarind extract and jaggery and little salt. Fry for 3-4 mins.

                   
8. Now add the remaining grinded mixture and required water and cook in a medium flame until brijals are fully cooked.
9. Garnish with coriander leaves and enjoy with hot rice and chapatis!!!!!

  2. Hi chamu whatever stuffing masala i have used mainly suits for brinjal. I use a different stuffing masala for lady's finger and capsicum etc which i will be posting it in my future.... Thanks.
