CLUSTER BEANS FRY

Cluster Beans also known as Gavar, Guwar or Guvar beans are beneficial for cardio health, great for diabetes, helps to make bones strong, better blood circulation, good during pregnancy, manage blood pressure. I usually prepare this recipe as a side dish for sambar. It also goes well with rice and chapati.

Ingredients:


1/2 lb cluster beans(wash and cut into small pieces)
1/4 tsp mustard seeds
1/4 tsp cumin seeds
few curry leaves
1/2 onion(if its big in size) or 1 onion(if its medium size)
1-2 red chillies
1/2 tomato(if its big in size) or 1 tomato(if its medium or small in size)
1/2 tbsp red chilli powder
1 tbsp coriander powder
1/4 tsp turmeric powder
3 tbsp shredded coconut
coriander leaves
salt

Method:

1. In a pan add 2-3 tbsp oil, mustard seeds, cumin seeds, curry leaves, red chillies and saute it. Once the mustard seeds splutters add onions and fry until it turns light brown(you can add little salt while frying the onions).
2. Add turmeric, red chilli powder ,coriander powder and saute for few seconds.
3. Now add tomatoes and pinch of salt and fry until the tomatoes are fully cooked and becomes mashy and starts leaving oil.
4. Add chopped cluster beans, required salt and saute for few seconds. Add 1/2 cup of water, cover the lid and cook it in a medium flame. In between keep frying the cluster beans and cover the lid. Once the water is absorbed completely and cluster beans are fully cooked add shredded coconut and mix well.
5. Switch of the flame and garnish with coriander leaves.

Enjoy with rice, chapatis or as a side dish with sambar!!!
