CAULIFLOWER GRAVY

Cauliflower vegetable has lots of health benefits.It reduces cancer risk, fights inflammation, provides high levels of vitamins and minerals, improves digestion and detoxification, aids in weight loss, helps balance hormones, preserves eye health. I have prepared without using garlic or ginger. I have learnt it from my cousin. It goes well with idli, dosas, chapatis and hot rice.

Ingredients:
1 full cauliflower(if its small in size) or 1/2 cauliflower(if its big in size)
1/2 onion
2 tomatoes(medium size)
2-3 red chillies
1/2 tbsp cumin seeds
few curry leaves
1 tbsp fried grams
3/4 tsp turmeric powder
1 tbsp coriander powder
1/4 tsp mustard seeds
1/4-1/2 cup shredded coconut
half lemon size tamarind
salt


Method:
1. Cut the cauliflower into pieces, wash them nicely and keep it aside.
2. In a pan add 2 tbsp oil, cumin seeds, curry leaves, fried grams, red chillies and fry until the fried grams turn light brown. Now add onions and fry until onions turns light brown. 
3. Add tomatoes, turmeric , coriander powder, tamarind, coconut and fry until the tomatoes are fully cooked. Switch of the flame and let it cool. In a blender grind all the fried ingredients into a fine paste.
4. In a pan add 2 tbsp of oil, cauliflower, little salt and fry for 4-5 mins. Now add the grinded mixture, 2 cups of water, required salt and cook until cauliflower is cooked and the oil separates(cook it in a medium flame).
5. Switch of the flame and garnish with coriander leaves.
Enjoy with hot rice!!!
