CARROT CAPSICUM SABZI(PORIYAL/PALYA)

Carrot Capsicum Sabzi is a very simple recipe. I usually prepare this as a side dish for sambar, rasam etc. It also goes well with chapatis.

Ingredients:
2 carrots(peel the skin and chop it finely into small pieces)
1/2 capsicum(finely chopped)
1/4 onion(finely chopped)
1/4 tsp mustard seeds
1/4 tsp cumin seeds
few curry leaves
1 - 2 red chillies
1/2 tbsp red chilli powder(as per your taste)
few coriander leaves 
3 tbsp oil

Method:
1. In a pan add oil, mustard seeds, cumin seeds, curry leaves and red chillies. Once the mustard seeds splutter, add onions and fry till it turns light brown.
2. Add turmeric and red chilli powder and saute for few seconds. Now add carrots and sprinkle some water, add required salt and cover the lid. Keep sauting in between.
3. Once the carrots are almost cooked, add chopped capsicum and cook until capsicum is slightly cooked. Garnish with coriander leaves.

Enjoy as a side dish with sambar and rasam!!!
