CAPSICUM MASALA RICE


Capsicum Masala Rice is a very good lunch box recipe. Whenever I am having shortage of time to cook I usually prepare this recipe.  I have used 3 different colors of capsicum here. 


Serves: 2

Ingredients:
1 cup of rice(soaked in water)
1 1/4 cup capsicum(I have used red,yellow and green)
1/4 onion(if its bigger size) or 1/2 onion(if its medium size)
1/4 tsp mustard seeds
few curry leaves
1 tbsp cumin seeds
2 tbsp urad dal
2 1/2 tbsp coriander seeds
4-5 red chillies(as per your taste)
2 tbsp groundnuts
2 tbsp shredded coconut
coriander leaves
salt

Method:
1. Cook rice and keep it aside.
2. In a pan add 1tbsp of oil, cumin seeds, urad dal, coriander seeds, red chillies and groundnuts and saute in a medium flame until all the ingredients turn light brown. Switch of the flame and add shredded coconut and mix well. Grind all these ingredients in a blender. Now the masala powder is ready.
3. In a pan add 2 tbsp of oil, mustard seeds, curry leaves. Once the mustard seeds splutter add onions and fry till they turn light brown. 
4. Add capsicums(chopped into small pieces) and fry until capsicums are slightly cooked. Add the grinded masala powder and mix well.
5. Add cooked rice and mix gently. Garnish with coriander leaves and serve hot.
