BOILED EGG CURRY

Boiled Egg Curry recipe is a simple one. I have prepared this recipe by making curry separately and adding cut boiled eggs into it. It is my father's recipe. My husband likes it a lot to have with chapati. It also goes well with rice too.

Serves - 2

Ingredients:
3-4 boiled eggs
2-3 cloves
1/4 tsp mustard seeds
1/4 cumin seeds
4-5 garlic cloves(crushed or chopped finely)
1/2 onion (if its big) or 1 onion
1/2 tomato
2 green chillies
curry leaves
pinch of turmeric
1/4 tsp garam masala powder
1-2 tbsp pepper powder(as per spice required)
coriander leaves

Method:

1. Cut boiled eggs into medium pieces and keep it aside.
2. In a pan add 3-4 tbsp oil cloves, mustard seeds, cumin seeds. Once the mustard seeds splutters add crushed garlic and curry leaves and fry them until garlic turns light brown.
3. Now add onions, green chillies and saute until onions are cooked. Add turmeric and tomatoes and little salt and fry it until the tomatoes becomes mashy and oil starts to separate. Add garam masala and saute for few seconds. Now the curry is ready.
4. Add cut boiled eggs, pepper powder and salt. Mix well slowly in a low flame for 2 mins.
Garnish with coriander leaves and serve hot with chapatis!!!
