ALOO BHINDI FRY


Aloo Bhindi Fry is a very simple recipe. I usually prepare this whenever I am very tired to cook. It is a very good side dish for sambar, rasam, chapatis etc. It is also a very good try for beginners in cooking.

Ingredients:

1lb okra(lady's finger)

1-2 medium size potato
1/2 onion
few curry leaves
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp turmeric powder
1/2 tbsp red chilli powder
1/2 tsp garam masala powder

Method:

1. Peel and cut potatoes into small pieces and soak them in water.

2. Cut okras into small pieces.
Note: After you wash okras wipe it well and then cut it. so that it doesn't become more sticky while cooking.
3. In a pan add 2 tbsp oil and add cut potatoes and little salt. Fry it in medium flame by sprinkling little water. Make sure you don't add more water otherwise it becomes mashed. Once the potatoes are fully cooked keep it aside.
4. In the same pan add 2 tbsp oil, mustard seeds, cumin seeds, curry leaves. Once mustard seeds splutters add onions and fry until onions are cooked.
5. Now add turmeric, red chilli powder and garam masala and stir for few seconds. Add okras and mix well. Sprinkle some water. Do not add more water otherwise it becomes sticky.
6. Once okras are almost cooked add required salt and fry them until they are fully cooked in a medium flame.
7. Now add the potatoes and mix them with okra . Stir both of them well in a low flame for few seconds. Garnish with coriander leaves.

Serve hot with chapatis or side dish for sambar, rasam!!!!
