AKKI ROTI(RICE ROTI)

Akki Roti(Rice Roti) is a karnataka cuisine prepared using rice flour. I have used leftover rice, rice flour, dill leaves, onions and carrot. You can also use other vegetables like cabbage, capsicum etc. I have learnt this recipe from my mother. When you are having leftover rice you can try this recipe which can be served for breakfast or dinner. Akki roti is good with chutney as side dish. Mint or Coconut chutney can be served as side dish.

Ingredients:
1 cup rice flour
1 cup leftover rice
1 bunch of dill leaves
1/4 onion(chopped finely into very small pieces)
1/2 shredded carrot
2-3 green chillies
1 tbsp coriander leaves(optional)
salt
1/2 tbsp cumin seeds


Method:
1. Blend the leftover rice in a blender coarsely. In a bowl add all the ingredients mentioned along with the grinded rice. Mix it well in hand by adding hot water. The dough should be soft.


2. Once the dough is ready. Make balls of same size.


3. Place the ball sized dough on the pan and spread it into a circular disc by wetting your hand in a bowl of water (In between wet your hands, while spreading the dough into a circular disc).



4. Add few drops of oil on the edges. Cook till both the sides turn golden brown color. Take it out from the the pan or tawa. If u want roti to be some more crisp, cook for few more mins till it turns crisp and more brown in color.

Serve hot with chutney!!!!
