MINT CHUTNEY(PUDINA CHUTNEY)
Mint or Pudina Chutney is our all time favorite. My daughter loves a lot to eat with idli and Dosa. I usually prepare for idli, dosa and tomato pulav. This recipe I learnt from my Mother-in-law. She cooks very tasty dishes. In my future blog will be sharing many of her recipes too. Mint chutney is very good for digestion.
Ingredients:
1 whole bunch of mint(pudina)
1/2 onion roughly chopped
1/2 tomato if its big or 1 tomato if its medium
4-5 red chillies(as per spice level)
5-6 garlic pods
Gooseberry size tamarind
2-3 tbsp of coriander leaves
2-3 tbsp of grated coconut
Seasoning:
1/4 spoon mustard seeds
1/4 spoon urad dal
1/4 spoon channa dal
oil
Method:
1. In a pan add 1 tbsp oil and mustard seeds. Once it splutters add urad dal, channa dal, once it turns little brown add garlic and saute for few seconds. Now add onions and fry until onion turns golden brown.
2. Add tomatoes and saute until tomatoes turns little mushy.
3. Add tamarind, mint leaves and corriander leaves and fry for 3 to 4 mins.
4. Add grated coconut and switch off the flame and required salt.
5. Blend it in a blender by adding little water.
Note: Don't add more water while blending because this chutney should be little thick.
